Day 3 -Paleo Bake-

 In a Large Sized Pot or Wok

60ml Extra Virgin Olive Oil

1 onion (Diced)

1 Clove Garlic (Crushed)

1 Red Chilli (Chopped)

 Cook onion, garlic and chilli in olive oil on a medium to low heat until the onion is soft and translucent

500g Beef Mince

1 Pack Fresh Thyme (chopped)

1 Pack Fresh Oregano (Chopped)

6 Large Leaves of Basil (Shredded)

Half Tea Spoon Ground Cumin

Half Tea Spoon Mild Paprika

1 Kg Fresh Tomato (Chopped)

2 Carrots (grated)

 Add Mince, Turn heat up to high and Cook until all Mince is Lightly Brown

Add Herbs and Spice Turn heat down to Medium

Add Tomato, Carrot and Cook on medium for about 30 minutes  

 2 Green Zucchini

2 Yellow Zucchini

Thinly Slice Zucchini, Pour Meat into an oven proof dish Cover with Sliced Zucchini and Bake @ 180° Until Zucchini is cooked. About 15 Minutes.

Made this one tonight and it is yummy !!! We nearly polished off the whole lot but had to save a bit for lunch. Quite a light feeling dish. Hope you guys like it too :) Thanks Rosco ! Your the BEST !

Attempted some Paleo Pancakes this morning courtesy of Rhea and may need to tweak it abit according to my likings:

1 cup Almond Meal
1/4 cup Coconut Milk
1 egg

I had it with honey and frozen berries. May need to make them even thinner and maybe try another brand of coconut milk or else i'm thinking i only like coconut milk as a dressing rather than in my food, if that makes sense.

B: coffee...
Morning T: brocolli, cucumber, a little bit of leftover beef caserolle - not paleo as it has bacon+peas+corn, avocado. Apple, bit of mango. Almonds.
Lunch: quarter of tuna + avo sandwich ( sophies leftover..), ginger + chilli chicken + brocolli

Made a MAD roast chook salad for lunch!!!!
3/4 Chook
3 Tomatoes
1/2 Green Capcicum
Spring onions
Fresh Chilli
Lettuce
1/3 Cucumber
and lemon juice over the top...
Was awesome!

Forgot i added 1/2 tsp of cocoa for pancakes.

Pancakes w/honey & frozen berries
Handful of roasted almonds
Banana
Orange
Diced Watermelon
Paleo Bake
Mango Seed
Kiwi Fruit
Apple to go if still abit peckish..
Dins Dins is Steak and veg

I've been a bit slack with eating today as I've been so busy and havn't had time to make any lunch.

But so far today I've had:

Apricot
Macadamias
Some fresh pineapple
little bit of roast chicken

Tonight I'm going to make a beef salad, with capsicum, mushrooms, chilli, garlic, onion, cucumber and tomato.

I'm going to try Ross's paleo bake tomorrow night. Can't wait! mmmm

B= Omlette-mushrooms,capsicum, tomatoes & chicken
snack=almonds, dates, macadamias, hazel nuts and a mango
L= cauliflower, brocolli & carrot salad & pear.
D= Ross' Paleo Bake putting it all together now I'm sure it's going to be mighty fine tasting!!!!
Lhani & Rhea thanks for posting the pancake receipe I've been hanging out/craving some pancakes!!!
I think I might do them tomorrow morning. yummo!

D: gonna have shark with fresh lemon.. and some stir fried veg like norm..

Think I ate way to much meat yesterday so toned it down a bit.
Breakfast 5:45am - 1 homemade lamb and garlic sausage and 2 poached eggs
Snack 9am - Banana and nuts
Lunch 12:30pm - Sliced Turkey, 1 left over lamb and rosemary rissole and salad
Snack 3pm - Apple, Mandarin
Dinner 7:30pm - Made Tacos from scratch with topside mince and heaps of different spices and herbs.
Used lettuce leaves instead of taco shells and tasted great can give a general recipe if anyone wants mainly I made it to taste.

Taco Fillings - This was for 2 people.
500gm Topside mince
1 medium finely chopped onion
pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon dried mixed herbs (Italian blend - could use oregano if you have it)
1/2 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon Cayenne pepper
About 5 drops of Tabasco sauce
A little water

Brown mince with a little olive oil and add onions and little pepper when it starts to brown.
Once it is browned add the rest of the ingredients and enough water to combine the herbs and spices.
Don't add alot of water like you are making it from a packet because there is no flour to thicken it (you could probably use nut flour and a bit more water to make it thicker but I haven't been able to find nut flour yet)
Simmer for 15 mins checking a couple of times to see if it needs a little more water.

Will post taco sauce in next post.

1 can un-salted diced tomatoes
1 teaspoon ground cumin
1/4 teaspoon garlic powder
2 teaspoons dried minced onion
1/2 teaspoon dried herb mix (Italian herbs)
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Cayenne pepper and 1/4 teaspoon Tabasco sauce (more if you like hot or less if you don't)
Salt and pepper to taste

I think these needed a little salt as most tomato sauces do but it basically used 2 turns of the salt grinder. You could leave it out I'm sure.
Basically just through it all in a bowl and put in the fridge for 30 mins to get the flavors combined.
This made a lot and I will be using it as a dip for the next couple of days for snacks with celery.

Then I just used lettuce leaves with the mince and the sauce. Added grated carrot and chopped tomato.
