Here's one for the purists out there..
Raw Paleo Steak Tartare
400g Best Quality Beef Fillet Chopped Fine (Not Minced)
3 Eschalots Chopped super fine
1 Clove Garlic chopped super fine
1 Red Chili Chopped fine
Handful Chopped Flat leaf Parsley
Pepper to taste
4 Quail Eggs (Yolks Only)
Mix all chopped ingredients together, form into 4 small domes.
With a spoon make a small dent in the top and place the egg yolk on top.
Serve with beetroot or Parsnip crisps.
